Sugarcane decaffeination process (using ethyl acetate) is considered safe and is a popular natural, "chemical-free" method (referring to the fact it does not use any synthetic chemicals like the methylene chloride method) . It uses a naturally derived solvent, from fermented sugarcane, to remove 97–99% of caffeine while retaining better flavor than other methods.
